How to store food in the refrigerator to keep it freshest

Generally speaking, the temperature is the highest at the refrigerator door and the lowest near the back wall; the upper layer of the refrigerator is warmer and the lower layer is colder; the crisper is rarely turned and is close to the lower layer, so the temperature is the lowest there. Therefore, we might as well divide the refrigerator freezer into 6 areas in order of temperature: refrigerator door frame, upper door area, upper rear wall area, lower door area, lower rear wall area, and crisper box.

      1. Suitable for placing on the refrigerator door shelf: packaged but opened food that will not go bad within a day or two, such as tomato sauce, salad dressing, tahini, hoisin sauce, cheese, butter, jam, juice, etc., and egg , salted duck eggs and other egg foods.

      2. Suitable for placing on the upper floor near the door: direct-entry delicacies, yogurt, desserts, etc. When storing these foods, you should avoid low temperatures and prevent cross-contamination of raw and cooked foods, so they should not be placed on the lower floor.

      3. Suitable for placing on the back wall of the upper layer: leftover rice, leftover soy milk, packaged soy products, etc. Since these foods can easily breed bacteria, a temperature slightly below 0°C is most suitable.

      4. Suitable for placing on the lower floor near the door: various vegetables and temperate fruits such as apples and pears, and should be packed in fresh-keeping bags to avoid freezing due to low temperatures.

      5. Suitable to be placed on the back wall of the lower floor: Foods that are not cooked but need to be stored at low temperatures, such as water tofu, salted kelp shreds, etc., as well as foods that are tightly packaged to avoid cross-contamination, and foods that are waiting to be slowly thawed, are suitable for storage in the coldest place, such as the back wall of the lower floor.

      6. Suitable for storage in fresh-keeping boxes: acidified refrigerated meat, semi-thawed fish, shrimp and other seafood. Since bacteria in aquatic products are often resistant to low temperatures, a slightly higher temperature will easily accelerate their reproduction. The crisper box can not only play an isolation role to avoid cross-contamination, but also has a heat preservation effect to avoid temperature fluctuations caused by frequent opening and closing of the refrigerator door. In addition, if there is a special temperature-adjustable crisper, it is best to put the meat in the crisper at -1℃-1℃.
